Also need the dimensions of the cutouts in the control room.

How finished is the interior control-room / recording room demising wall? Is this block as well? Would you consider changing the layout to something like I showed in green?

The wall splitting the control room and recording room is nearly up to full height so will be around 2.800m it is built out of 140mm thick concrete block / limestone,sandstone so will not be able to change it.

i think the first drawing may be your best best as it makes the CR more symmetrical (the door next to the mix desk would not be fun) and leaves a decent size LR (plus in a pinch you might leverage the workshop behind the CR (say guitar amps or leslie unit when you are recording acoustic instruments in the LR...))

The gap in the wall next to the desk is not a door it will be the window between the 2 rooms it is in the picture above.

Yeah that's pretty much what is there at the moment, apart from the dividing wall between the control and live room is not touching the outside wall at the top or the interior corridor wall near the entrance,

The dividing wall is going to be part of the interior live room walls, I am building now as the control room face needs to be rendered for extra strength and sound proofing before building the studs for the control room

ok, so assuming the mix desk is facing the window, you're going to have a door right next to it?

No it will be like the 4th post on page 2,like your original design but reversed so the window will be to the left of the desk, I'v added the position of the desk to your last plan, I hope you don't mind,

I'm wondering what sort of isolation I can expect from a heavy fire door if correctly sealed when shut?

Looking at my rough plan you can see that I will have an air lock between the control and live room this small corridor will have a upvc double glazed window and entrance door, any ideas what noise levels I can expect outside with a band playing in the live room, or should I start to plan for double doors on the control room and live room bear in mind that the floor levels in these 2 rooms will be around 900mm lower than the corridor, I am planning on having steps down into these rooms like these but only the required 4-5 steps

As mentioned in my first posts I have quite a few sheets of ply flooring but I have been reading in a lot of builds that concrete floor is best with maybe just some laminated flooring,
so wondered wether I could use the plywood sheets for my first layer on the walls etc, it is 18mm thick and 600mm x 1220mm with a 'tongue & groove' and then 1 sheet of 15mm plasterboard on top of this, how would this compare with 2 layers of 15mm plasterboard?

Yes, that's the general recommendation. Any type of hard floor is good, provided that the rest of the room is treated suitably.

That would work fine. Plywood is almost the same density as drywall, so isolation will be similar, plus and you'd have the advantage of much better structural strength in the wall (particularly in sheer), and also you'll have a nailing surface everywhere around the room, not just the studs.
